The Alfred Centre - the Alfred Hospital
Today, we went to visit the lovely and powerful support team with @diana.chan.au in Central Sterilizing Service Department in Melbourne Alfred hospital. It was great to see the team who are very busy but doing well!
We are pleased to support them and to give out one box of dumplings to each team members with our @goldenwokfoods Diana Chan’s range of dumplings.

Now THAT is a feast! @so.incredibly.delicious' spread of our @homaifoods and @goldenwokfoods all in one shot is amazing! 👏👏👏 Here's her recipe:
120g Vermicelli, cook according to packet direction.
12 Ho Mai cocktail spring rolls, fried, cut in half
1 Carrot, peeled, cut into matchticks
1 Lebanese cucumber, sliced
1/2 Red onion, thinly sliced
8 Cherry tomatoes, sliced
1 Cup fresh coriander leaves
1/2 Cup mint leaves
A handful of basil leaves
1/4 Cup roasted peanuts, roughly chopped
1/4 Cup fried shallots
1 Red long chilli, sliced
Spring onion, for garnish

Nuoc Cham dressing:
3 tbsp. Fish sauce
2 tbsp. White vinegar
2 tsp. Fresh lime juice
3 tbsp. Coconut sugar or caster sugar
1 Long red chili, finely chopped
1 Garlic clove, peeled, finely chopped
Method:
1. Combine all the dressing ingredients. Set aside.
2. To make the salad, place cooked noodles in a large bowl. Add all the vegetables and toss to combine. Place peanuts, fried shallots and spring onion on top.
3. Arrange the warm spring rolls around the salad. Serve with the dressing.

Wonton Soup
10 Golden Wok chicken mini dim sims, steamed
4 Cups chicken stock
4cm piece ginger, sliced
1 Clove garlic, minced
1 tbsp soy sauce
2 tsp sesame oil
1 Bunch bok choy, leaves separated
1 Small carrot, sliced
6 Button mushrooms, sliced
2 Spring onion, thinly sliced

Method:
1. To make the soup, add chicken stock into a large pot. Add in garlic, ginger and soy sauce. Bring to a boil. Add salt if needed.
2. Reduce heat to simmer then add the mushrooms and bok choy. Stir in the sesame oil.
3. Ladle hot soup over wontons. Garnish with spring onion.

Szechuan Pork Dumplings
230g Diana Chan’s Szechuan Pork Dumplings, steamed
Drizzle dumplings with store chilli oil. Sprinkle with toasted black and white sesame seeds. Garnish with micro herbs.
Sesame dipping sauce for steamed chicken mini dim sims
2 tbsp kecap manis
2 tbsp rice wine vinegar
1/4 tsp sesame oil
1 small red chilli
(Mix all the ingredients)

Yum, enjoy!
